Baked Herb and Cheese Covered Tomato Slices

If you are looking for a recipe using tomato slices and herbs, look no further. Tomato slices are used to create a delightfully easy and tasty recipe using basil and/or rosemary or any other herb of your choosing.

  • tomato slices
  • basil, rosemary (crushed), or herb of your choosing (dried or finely chopped fresh)
  • salt and pepper
  • Parmesan cheese or Parmesan/Romano cheese blend
  • grated cheeses such as Colby, cheddar, asiago, Monterrey, etc.

Preheat oven to 450 degrees.

Slice tomatoes approximately 3/8″ thick. Arrange on foil lined baking sheet. Baking sheet must have a lip on all sides. Sprinkle with the herbs of your choosing. Below, dried basil was used.

Sprinkle with herb of choice.

Sprinkle with salt and pepper and any other seasoning you desire. Montreal Steak Seasoning works well as does garlic powder.

Sprinkle with Parmesan cheese or Parmesan/Romano Cheese mixture as shown below.

Sprinkled with grated Parmesan cheese.

Add a layer of one or two grated cheeses. Asiago and Colby cheeses are shown below.

Add freshly grated cheeses.

Bake at 450 degrees for 15 minutes.

Allow to sit for a few minutes to firm up a bit. Use spatula to arrange on plate to serve.

Note the liquid in the pan between the tomatoes. This is why you want to use a cooking sheet with a rimmed edge.
